The department of Tolima is nestled in the heart of the central Andes. While it enjoys a climate highly favorable to coffee growing, the department is also affected by armed conflicts and drug trafficking. The reduction of these conflicts and trafficking has opened up new opportunities for the region, and it has only recently begun producing and exporting coffee. Traditionally, the Arabicas from this region are floral, with citrus notes.
This coffee is produced by a FairTrade and organic certified cooperative of over 55 farmers. To produce this excellent coffee, the cooperative has invested in building, improving, and maintaining the infrastructure necessary for such production. Roads have been improved, and members have been trained in coffee harvesting and processing methods. In a region where jobs outside of coffee growing are very limited, it is essential to offer young people new opportunities to prevent them from becoming involved in the cycle of crime. This is why FairTrade associations organize courses to develop the art of coffee extraction by training baristas, quality control training, and business management. For members, access to agronomic, commercial, and economic support is facilitated (in addition to all the other benefits of the cooperative).
The producers process their cherries themselves on their farm. The cherries are hand-picked and pulped on site. After fermentation, the berries are rinsed with water to remove any remaining mucilage. The parchment is then sun-dried.
